Bottarga di Muggine is salted, pressed, and dried grey mullet roe. The ancient tradition of producing Bottarga has been maintained by devoted Sardinian fishermen. Bottarga is wonderful grated over green salad or pasta, or thinly shaved on crostini with an olive tapenade, accented with a curl of butter or a drizzle of extra virgin olive oil. Bottarga needs to be stored in the refrigerator. For long-term storage, do as Mario Batali does and wrap it in foil and keep in the freezer. Then, just grate off the lobe whenever you need to add some flavor to special dishes.

Please Note: This is a natural, artisan product and the color of the bottarga may vary from a burnt orange to a dark indigo color. Keep refrigerated.
